Watermelon Shrimp Summer Salad

Ingredients

  • 1 Seedless Watermelon, Cut Into 1 Inch Cubes
  • 2 Pounds of Peeled and Deveined Cooked Shrimp
  • 1 Large Cucumber, Thinly Sliced
  • 1 Small Chopped Onion
  • 1 Small Mandarin, Peeled and Sectioned
  • 1/3 Cup Lemon Juice

Directions

Combine and toss all the ingredients in a large bowl. Drizzle with oil and vinegar and refrigerate until cool.
